I'm a big fan of the Scythian Suite (prokoviev). The way it opens up from aggressive, highly dissonant, almost heavy metal madness into this wonderfuly melodious final movement i find absolutely euphoric.
In Jazz, I love Red Garland's recording of "Soon" from "I Can't See for Lookin." Everyone just swings so hard on that record.
