It's how much rain/sun, the soil it was grown in, new vines versus old vines, when it was picked, how long in the barrels, new oak versus old oak.
Some wines are hardly barreled at all. Some years it rains and the crop is washout. Some years it's all hot sunny days and cool nights making for great vintages. In France, 1945, 1961, 1982 and 2005 are banner vintages.
There's much much more to it than just the barrel.
