IMO the 12s play better with each other than mixed with the 210s. The 12s are not as loud (sensitive) so they get slightly overshadowed by the 210. I find this true of all 112 cabs.
But two 112s is good - kind of like the midrange of 15s but a lot tighter, and punchy. They're not deep by any means, but they do bring a beefy low end. Ampeg-deep they will never be.
My preference is for the two 112s, but if you do any rock like journey or other 80s stuff, you might need the depth that two 210s have.
