They are out of chestnut for the heel anyways so I understand.
Let me ask you for your experience :
1. Why would you not go with chestnut if its mahogany wings?
2. Why would you go with maple instead of alder or ash with mahogany wings?

With a Mahogany body I like to balance it with a harder wood then Chestnut. Maple works really well with Mahogany. Many of the so-called "golden era" Fodera's used that combo and it was pretty magical.
Maple would be my preference. Ash would probably be next.
BTW - none of this is scientific at all. This is all from my experience. I've had so many Fodera's over the years, I've learned what I like. Your tastes may not be the same.
