Im having a bass built with pink ivory as a fretboard. I was told it has the tonal aspects of ebony mixed with maple, but more ebony.
I have never smelled Bloodwood that reminded me of Belgian ale or pineapple. It's a straight up cinnamon vibe.
I also have not smelled any notes of pepperoni in Macassar Ebony. To me, it's more of an earthy smell.
I haven't had Cheerios in so long that I forget what they smell like, but saying that Ash smells like them doesn't seem far fetched to me. I've noted a vaguely popcorn-like smell when I've worked with it.
Bocote definitely has a pickle vibe.
I could swear that Wenge smells like chocolate, but I'm 90% sure that it's a psychological thing, because the finer sawdust looks like chocolate milk powder.
If you need a bass to play when you're sick, try Campha Laurel. It smells exactly like Vick's Vapo-rub. (Well, at least when cutting/sanding.)
This video from, Taylor guitars, opened my eyes to the whole "ebony" debate.

Odor: Camphor has a very characteristic odor, for which the tree is named. The most recognizable product that contains the extracts of camphor are medicated chest rubs, which have the same distinct scent.
my shop still has a hint of the Camphor burl topped bass I made last year - thickness sanding that wood was an experience. the smell was so strong it was noticeably present inside the office, a feat that required it migrating thru a 6" insulated wall
to me, Goncalo Alves smells like a cat just whizzed in the shop
I don't much care for the smell of Alder either - reminds me of peeing on a campfire as a kid ... nasty smell it has
