Flying V basses are known for neck dive anyway.
Warmoth sells V bodies for bass. That would probably be the best way.

I am currently building a saga jazz bass but have upgraded various bits
I have heard comments about quality of the bodies and hardware is relatively cheap but acceptable. I would say there is nothin that cannot be worked around and quality in my kit is fine. Many more will testify as to their value for money. Carvin are well known for bein the best quality kits, but they will also cost you a lot more.
The saga bodies come with quite a lot of sanding sealer on them as they are intended to be spray finished. The wood is basswood. if you want a natural finish then this may not be what you are looking for
The saga neck and fretwork is very good in my opinion, mine needs a little clean bu other than that seems pretty much perfect.
Everything is upgradable, just depends on how much you want to put into it.
For a first kit it is something I think that is good to learn with.
If you do want more choice in the body wood department, you could always buy a body blank to replace the saga one with or you could take a look at www.guitarfetish.com kits
For lots of saga build examples and excellent guitar building help in their forums check out www.guitarattack.com
That will wet you're appetite a little as to what can be achieved with the saga kits
