I think you will find the main difference is that the more expensive headphones will last longer, and be more fixable.

I have Sennheiser HD650's and they are in fact more fixable than I expected. The chords which plug into each headphone (one of the weaker points)can be replaced, just unplug them, no problem. There is a world of difference however in good headphones and less. In addition to fixable and longer lasting(which depending on which ones you are speaking of may or may not be true), the sound is the thing, and the ability to turn music into nirvana with the aid of a decent, or better, headphone amp.
