My fav salmon recipe:
Take a salmon fillet, calculate 150-200 grams per person. Salt and pepper it (I prefer freshly ground black pepper) and add a generous amount of very finely chopped rosemary leaves, alternatively ground dried rosemary. Work the spices into the fillet. Place it in a buttered baking pan just slightly larger than the fillet and put a few thin slices of butter on top of the fillet. Put it in a hot oven preheated to 250 deg C and once inside the oven, lower the heat to 200 deg C.
While the fish is in the oven, chop a couple of onions into semi-coarse parts. Chop some more rosemary as well. Take out the salmon after it has been in the oven about 10 minutes, and add the onions around the fillet. Then pour cream (real heavy cream, don't destroy the dish by using a light version, they all taste like ****) around the fillet so that it almost covers the fish (perhaps 5dl) and add a bit more salt, pepper and rosemary to season the cream with. The cream becomes the sauce. Put the fish back in the oven at 200 deg C for another 20 minutes about. Don't over/undercook it.
Serve with boiled potatoes, some fried and salted green asparagus and a good, full-bodied chardonnay. As it is difficult to salt the fish properly, make sure there's salt available on the table. Gourmet (flake) salt is the best.
You can also do the sauce separately: put some butter in a hot saucepan (50 grams), add chopped onions, some of the fish cut in small pieces and rosemary. Fry lightly and add the cream, as much as you need. Let it boil a few minutes while stirring frequently. Add salt to taste. Run the sauce in a mixer if you prefer it smooth.
Avoid lemon with this dish. It doesn't fit too well IMO.
