Never really had the chance to really rip and tear into one of these in a live setting and there is one close to me for a pretty good deal. But just wondering how they sound with a 5 string. I mainly play a EBMM sr5.

I would say, with enough power, an Ampeg 8x10 and an SR5 would disembowel a kitten from 100 yards.

A vintage 810 cab doesn't give you much below 70 hz. That means the fundamental of even the 3rd fret C on the A string is significantly rolled off. (see, www.drewdaniels.com/FREQ.pdf ) Does it matter? You have to decide based on personal tone goals.
5's and tens I am thinking will not be the best bet, although some cabs with tens are capable, but not an 810e.
If you want something with some low end projection I would go 2x15.
