I think all the people recommending classical are on the right track. I'm not that knowledgeable about it (I tend to stick to classical music for solo piano, my favorite). Even then it probably wouldn't be Dubussy whom I favor, but I would look for something with clarity and logic. Maybe Mozart? More contemporary perhaps Bill Evans.
Miles Davis. They’d be “whaaaaaaat?” and after a few listens they would get it and within a month they would be really cool.

Not sure if this is a really good question or a really silly one but I'll bite. Think I'd sing to them first, start primal and I'm also a vocalist
then drum on something and sing along
I actually knew someone who had never heard music before. (They measured his age in months, not years. He turned one year old during the time I knew him.) He was fascinated by just a few simple chords on a guitar. It seems to me that something like that is a great starting point.
Why stop there? Keep going further back...
Otherwise, certainly nothing electronically generated, modified, or amplified, there’s time enough for their ears and nervous system to be under attack. Take them to an aviary, to hear nature’s music.

If someone had somehow never heard music before, I wouldn't want to overwhelm them by hitting them with something as vast and complex as classical music - or as loud and scary as metal - as their first listen. So setting some criteria...
- Structurally simple.
- Shows some different instruments (including the human voice) and the interplay between them, without being too complicated.
- Shows the "framework for silence" and emotions that are the WHY of music.
