Web browsers worked perfectly well for over 20 years. In fact, they still work. Most apps are just web browsers that only go to one website. Just let me use my normal web browser.

I'm sick of apps

Isn't it wonderful how tech is becoming more capable and less useful at the same time?
My favorite app has to be chips, guac, and spicy salsa...or mozza sticks...or quesdillas.
If you mean phone apps, I've been tired of them for as long as I've had a iPhone.
I have five different parking apps on my phone because different cities use different apps. Pretty stupid.
Because my last two cars came with no CD or tape player, I had to start using my phone to listen to in the car. I use Spotify, Apple Music and Bandcamp, each for a different reason. For music files that I keep on a hard drive at home, I make Apple Music playlists. For music I bought on Bandcamp, I download those to the phone. Spotify picks up the slack, a lot of it is music I already own on vinyl and CD. Of course none of those apps are as safe to use while driving as a CD or cassette player.
I have Google Home because that's the only to set up my wi-fi enabled alarm clock
Some apps are useful, like the AAA app which I've already used twice when I needed a tow coming home after a gig. The Apple Maps GPS is way better than the old handwritten directions I used to use.
My phone keeps telling me I need to set up my Apple Wallet and Apple Pay…no thanks.

+1 on the "no thanks" for Apple Wallet and Apple Pay.
I kinda look at how tech companies approach app development, updates, etc as being similar to how Big Pharma works: keep 'em sick.
Gotta love when you go to a website on a phone browser and it bugs you to install their app every visit.
I wish they stopped putting them on my phone unasked for with every update.

I hate having to use my phone for nearly everything. This obviously includes effing apps, but it's the internet of everything that's got me down.

Absolutely. If you can eliminate ownership you make money on everything all the time.
I remember when they were called Applications, and you would use them seated in a leather office chair at a desktop computer like a dignified businessperson. Now we're just tik-tockin all over the place like a buncha clowns.
They go to only one website, and harvest your personal data. Also, apps don't support ad blockers and privacy extensions.
Alot of them are also not checked for security holes - at least not by reputable security experts.
Every month or so it seems like I have to go thin out free solitaire or other random games that come with otherwise normal apps.
Those are the ones, I've never even played a game on my phone.
Then, every time you use the app, it makes you update the app. When I shop at the Kroger grocery store, they have some great specials but you have to clip a "digital coupon" on the app to get it. Of course, it makes do an update nearly every time I use it, so I'm going through a five minute procedure to clip my coupon.
