I currently have a late-2013 13" macbook with OS 10.12.6 (Sierra) and a mid-2015 iMac with OS 10.14.5 (Mojave), which is my main studio computer. Both have i5 CPUs (2.6 GHz in the macbook, 2.8 GHz in the iMac) and 8 Gb of RAM, and both are perfectly capable of running GarageBand, Logic and Studio One, with multiple tracks and plugins going on. I rarely need more than 12-16 tracks, but if you need dozens, you should look for something with at least a newer 4-core i7 and 16 Gb of RAM.
I didn't even notice my macbook still had Sierra. As long as everything works fine and you don't obsess with the latest stuff, you don't need to upgrade the OS. I'm definitely NOT upgrading to Catalina anytime soon.
