Let’s talk coffee

Me, I always blend after roasting. For me, there are too many variables between the various coffee beans to roast different ones at the same time.
Some of my most successful blends have been Central Africa and Central America with a scosche of South America. This is based on my personal preference of a fruity and acidic coffee paired with something a little smoky and dense.

Yeah, ok. Today I found that the thick front end of the Lake Toba to cut well with the El Volcan which is a bit brighter. Surprisingly for the Lake Toba being a Sumatran, it doesn't have the usual wet hulled earthiness one would expect which was cool, it was possibly dry processed.

I’ve played with blending pre and post roasting. While I certainly agree that it almost has to be best to do the blending afterwards, I have lucked into a few good experiments. Adding in 1:4 ratio really citrus-y, bright beans with something more earthy can be pretty good. I did more of this kind of thing when I ordered 10 different coffees in 1-pound bags.

I am think the only person who drinks more coffee then me is Leroy Jethro Gibbs!
What we have come to love has more to do with the grind then what beans you use.
You see,

we grind every pot fresh. I have used 8 O-clock brand and other National brands to Starbucks beans and have enjoyed them all. I like mine either black, or with a splash of canned milk.
As a matter of fact I am enjoying a cup as I post here

That looks like a mug of canned milk with a splash of coffee. :D

Someone hands mine out a window at McDonalds, it tastes like coffee and thats fine by me.

For the price and what it is, McDonald's is a decent cup of coffee.
7-11 and AM/PM have upped their coffee game recently. The AM/PM near me does a single origin Honduran that is fantastic, and it's only 99 cents any size. The 7-11 does an Ethiopian and Nicaraguan that are quite good too for 99 cents any size. Both always have it fresh, meaning less than an hour since brewed.
I'd never expect to find decent coffee at either location, but I've been impressed.

I'm a half and half user in my daily coffee. No sugar, have never liked sweet coffee at all. I love the coffee and cream mix. I'd say a 1/4 inch of the cow juice in my drinking vessel before the coffee is added.
I will add, my most favorite milkshake of all time is a good coffee milkshake, thus liking the sweet, go figure:p
