Listening to Jazz Blues

I’m hoping for some recommend listening Jazz Blues

Looking for examples of Blues that go from a dominant chord to a minor chord Bar 5 to Bar 6

Ie: Bb7/Eb7/Bb7/Bb7/Eb7/Ebminor/

Well, not 100% the progression you partially typed, but there are quite a few Bird blues heads that do that. CHI CHI, CHERYL come to mind most immediately.
Cmaj7/ D-7 G7/C maj7 /G-7 C7/ F7 / F-7 Bb7/ E-7 A7/Eb-7 Ab7/D-7 /G7 /E-7 A7/ D-7 G7// kind of thing. Also the BLUES FOR ALICE progression
F /E-7b5 A7/ D-7 G7/C-7 F7/ Bb7 /Bb-7 Eb7/A-7 /Ab-7 Db7/G- 7 /C7 / F7 D-7/G-7 C7//

I think a Rhythm Changes would be a good reference. It is possible have a Eo7 or Ab7 instead of the Eb min also.

If you look at Ed's post what you'll see is the shift from major to minor is used to set up a string of ii-V7 changes.

F7 / F-7 Bb7

Bb7 /Bb-7 Eb7

In both cases, compared to basic 12 bar blues changes what's happening in bars 5 and 6 is this:

IV/IV replaced by IV/iv-bVII

This sets up variations on iii/vi/ii/V in bars 7 to 10:

F7 / F-7 Bb7/ E-7 A7/Eb-7 Ab7/D-7 /G7
IV/iv7-bVII7/iii7-VI7/biii7-bVI7/ii7/V7

Bb7 /Bb-7 Eb7/A-7 /Ab-7 Db7/G- 7 /C7
IV/iv7-bVII7/iii7/biii7-bVI7/ii7/V7

That looks like chromatic downward root motion similar to what's often used in rhythm changes bridges.
