In all this talk of brands don't forget about string tension, a low tension set sounds mellow to me, more fundamental, a more 'laid-back' kind of tone.
.095 .070 .050 .035 is good and has equal tensions to stop the higher strings getting too relatively bright.

D'Addario ETB92 Nylon Tapewounds give a good clean Mellow tone.

Blue steels are bright as first and settle in to a nice warm tone. Like Chuck Rainey's 90's tone? these were a big part of it
