I understand about the cheese. But, in many areas a euphemistic "chicken barn" never housed any chickens, but is a venue for weddings, graduation parties, etc. I think the name derived from what was served. My experience is limited to south east and east central Wisconsin. Maybe different on the west side of the state.

Nope, held in place by the rubber feet outside of the arms. Could add bungees, but never had the need.
