making a sandwich

I might have found a nearby source for wood.
They have walnut, maple(not sure what kind), poplar, cherry, oak, sycamore, and sasafras.
I'm thinking of making a 2 inch blank with a walnut top and a maple center.
I'm undecided on the back and thickness of each layer.
What do you guys suggest?
1/4 inch thick walnut, 1/2 inch? Thicker?
Should I use a third wood for the back, or just use maple?
I know a lot of it will be about personal preference, but what are some other criteria for picking wood and thickness?
 
Look for nice grain, pieces that complement one another, avoid knots, voids and inclusion of incursions (ha! you see what I did there Rodent? Awww, yeah!) and really soft woods. Their exclusion is really mostly for visual appeal anyway. A lot of it will be about personal preference...
