That's the stuff! I've only been in a handful of places that had the "trompo". When I see one of those, there's no reason to order anything else!

Oh wait a minute...so is that how all al pastor is made? I was under the assumption that was the Northeast Mexico version
I have to find this in my area. I've never heard of it, but it sounds most tasty.
Alright, so how did the get it to look like that? Did they just stack a pig on a rod and start cutting it up?

Mama's Mexican Kitchen in Belltown. We'll drive from Lacey to eat there. They advertise Southern Cal Mexican food, and they deliver.

Went there Sunday night with my wife after the TB GTG nearby. Still exactly like I remembered it from 25 years or more ago. That's a good thing!
Awesome. I've been going there on and off for the last 25 years myself. The wife and I will be up there for lunch Saturday. Always the same for us too, which I also find to be a good thing. Oh boy, now I can't wait till Saturday.
I believe Al Pastor by definition is cooked on the spit.
