I think Taqueria De Anda might have them. When you see one, order the Al Pastor!

Oh wait a minute...so is that how all al pastor is made? I was under the assumption that was the Northeast Mexico version

I believe Al Pastor by definition is cooked on the spit.

I have to find this in my area. I've never heard of it, but it sounds most tasty.

You won't be sorry. It *is* pretty rare though.

Alright, so how did the get it to look like that? Did they just stack a pig on a rod and start cutting it up?

I believe it's essentially a giant pile of thin, steak-like cuts of meat. When someone orders, they carve it off the outer edge.
 
I haven't had Al Pastor in ages and I couldn't stand it anymore. The Taqueria de Anda in west Anaheim does indeed have a trompa/spit but it wasn't loaded. I got an Al Pastor burrito anyways.

The Taqueria de Anda in Orange in apparently much better than west Anaheim. This is the second "meh" burrito I've eaten in a row. :atoz:
 
Mama's Mexican Kitchen in Belltown. We'll drive from Lacey to eat there. They advertise Southern Cal Mexican food, and they deliver.

Went there Sunday night with my wife after the TB GTG nearby. Still exactly like I remembered it from 25 years or more ago. That's a good thing!

Not since we got back to WA. There used to be a joint by our house that had it, but they closed up and turned into a Cheers while we were gone.

Awesome. I've been going there on and off for the last 25 years myself. The wife and I will be up there for lunch Saturday. Always the same for us too, which I also find to be a good thing. Oh boy, now I can't wait till Saturday.

My wife was like: "sure you know where this place is and it's still there?"

Me: "2nd and Bell, and someone just mentioned it on TB a few weeks ago." We were staying at the Edgewater and it's just a short walk from there. I even ordered my usual from the specials menu, chile verde. My wife can be quite picky and she loved the place too.
