You know, these tunes are not Mahler symphonies. If you find a chord progression that everyone on the band agrees on and it sounds good to you, play it. There is no sacred text here. I just finished a dive into I Should Care, and musicians better than I have harmonized it differently in places, though the bare bones of the big moves generally are intact.
There was a pianist I worked with who liked to put fairly complicated and unusual chord changes to standard tunes. His philosophy was that melodies may be standard but harmonies aren't, especially in jazz. Sometimes he would write them out ahead of time and sometimes not. I played with him enough that I could generally tell when he was going to take off and could try to prepare my ear for it- great ear training.
I'll submit that I think very few singers will prefer to take this on in Ab, and it would take a special stylist to give it the emotional warmth it needs there. The melody's range in Eb is G to E, which works for a skilled baritone, but in Ab it'd be C to A. Fitting it to the average vocal range is tricky.

I have an electric piano at home which had a broken Bb, just next to middle C. Quite annoying, but since I don't play piano myself, for a long time I did not bother to get it fixed. So whenever a piano player showed up at home, I told them to pick another key. They did not like it. Those piano players are no better than singers when it comes to changing keys!
It's fixed now...
