The Ionian mode is also referred to as the diatonic major scale. You can also hear it put to good use in the opening phrase of Bach’s Cello Suite #1 in G Major.
It can be difficult to pinpoint tunes ‘played using the Ionian mode’ as chord changes and key changes will affect what ‘mode’ is being used. Just about any song in a major key will use it or some iteration of it.

A lot also depends on how you choose to use the modes. So context becomes very important. There are countless Jazz examples spanning the eras. Bernstein has some amazing examples of interval usage (not modes, exactly) in the songs of West Side Story (Maria, Somewhere both come to mind).
