So I am going to create one later this week. I think I have a 10mm straight end pin at the moment, so I will use 10mm steel rod.

Question: does playing with a bent endpin take all the weight off of the left hand as if I was sitting?

Playing with a properly drilled Laborie pin has a similar feel to sitting because the bass' body is supported by your body, taking weight off the thumb. You may have trouble getting there with your bent version. See if you can find an eggpin somewhere to experiment with if you don't want to drill the bass right away. Or find a drilled bass to try out.
