I don't know too much about gear. I have an ampeg SVT 810hp. It's a 4 ohm cab. I was looking at the acoustic b600h but everywhere I look says it's a 2ohm head. Will the two not work together? Don't really get what would happen if I mixed a 4 ohm cab with a 2ohm head.

It'll be fine. With a 4-ohm cab, you'll get a little more than half of the rated power of the amp at two ohms, but it won't cause any damage to the head.
The 2 ohm rating means the head will be ok with cabs as low as 2 ohms. With a higher impedance cab, the head will give less power - 450W into your 4 ohm cab. The lost volume is not significant. You'd be barely able to hear the difference.
