I am looking to expand my live rig, unfortunately I don't really know much about matching up cabinets. I recently purchased an acoustic b800h. I liked the price, and the power. I am running two sunn 2x15 cabinets both at 16 ohms for an 8 ohm load. While this may not be sensible, I am thinking I can probably get away with stacking another cab, perhapse a 4x10. If I were to do this, should I look for an 8 ohm cabinet? If I did the math right the end result should be a 4 ohm load.......I think?

Pairing cabinets at different ohms

Your math is correct. But your 410 would be getting the same amount of power as both of your 215s or, in other words, each 215 would be getting half as much power as the 410.

Yes, if you run a 16, a 16, and an 8 in parallel, you get 4 total. Half of the total wattage will go to the 8 ohm cab.
have you tried running one 2x15 cab, wired for a 4Ω load, like a normal sane person? 
if you're dragging out four 15s and feeling like you're not loud enough, something's not right.
a single good 2x15 with good power behind it should be as loud as any drummer, which is all you should ever need in bars/clubs;
conversely, any room or stage big enough to not get swamped by four 15s should also have a big enough PA and monitor system for you to do fine with no bass cabs at all!

And, I don't think the OP said anything that would lead me to believe these were two new Sunn 16 ohm 215's.
