Power Amp Trial

Tomorrow night I'm going to try out my new power amp rig at band practice. I'm running an Empress Para eq at the end of my pedal chain into a Peavey VX 1.5 K power amp through 2 vintage Peavey BW 115's. I played the empress through the power amp in the store into an old Ampeg 115 cab and it sounded amazing. I then took the empress home and played through it into my cheapo practice amp and I got it sounding like a vintage tube.

I'm not planning on bridging, but
I'm wondering if I should run one channel or two. Using one should push more watts, but two would allow me to go stereo. Volume shouldn't be an issue either way. I have a feeling this rig is going to be plenty loud.

Please add thoughts/suggestions. I'll let you all know how it goes.
