Where would one connect headphones to on a stage that only has floor monitors?Is it even possible?

Yes, it is possible. One possible solution is to jump off the last speaker in the chain into a DI box capable of accepting a speaker level signal. You can then take the XLR output and run it to something like the transmitter for an IEM system. In this case I'd want some sort of physical separation (read wireless) from the speaker level signal so there is no chance of sending a speaker level signal to my headphones! Of course, if you have access to the amps, you can just chain the IEM transmitter off the input of the amp.
