Is there a functional difference between regular size pots and mini size pots?
Also, can I use a 500k pot in place of a 250k and get the same result?

no real difference between the sizes. But, the larger the resistance value, that brighter the tone, generally speaking.

Depends what you mean by same results.
It'll do the volume sweep function perfectly well, but the 500K will let more highs through - a 250K pot will give you a slightly warmer sound.
