If you give me more information to work with I may be able to get you going. I have never configured a modem for dial-up access in Ubuntu. It seems that the major obstacle is going to be getting the hardware to work depending on the modem type. Is it internal?
 
Click on the modem listing to highlight it. At the top of the Network setting dialog box you should see drop down box labeled Location:. Click the drop down box and select create location. It's going to ask you to enter a name. For example, you can enter Home.
 
With the modem selection highlighted, click on the properties tab. It should open a dialog box at the General tab by default. If not select the General tab. Once there click on the box in front of Enable this connection to put a check mark there.

Enter the phone number for your ISP.
Enter you user name and password.
Click the modem tab.
Click on the Autodetect button.
For dial type select Tones.
Select the volume setting. (This is just so that you can hear the modem dial out).
Click on the Options tab.
The set modem as default...... and Use the Internet service provider boxes should be checked. You can also check the retry options if you would like.
Now click OK.
 
Once you get up and running, I have a book on Ubuntu in digital format that might be helpful to you. I can send it to you email address via You Send It but I would need your email addy to send it your way. You will need to download the GnoCHM viewer by using the add/remove applications in Ubuntu in order to view it.
