Why wouldn't you want to use hide glue? Am I missing something here? Or is that only for acoustic instruments?

Hide glue would be great to use here, if you are set up to use it and you know how.

I don't use it because its made from animals, which I find offensive. It smells bad too.
 
Animal glue is a thing of the past and those that use it think that the "tradition" is important.

Hide glue is about 2000 years old and for most of that it was the only glue available. Resins are "new."

Electric guitars are also "new."

I trust chemistry; epoxides for the fingerboard.
