I'm not even a good cook, can hardly even use a knife properly, let alone even touch sashimi. I posted a new thread about a new passion, which is working with knives. This is just an example of a knife that makes me happy looking at it. I'd probably never bring a good knife like that to its potential.
The sheer dedication, time, and skill to work on a knife like this is just incomprehensible. I've seen clips of those sharpening masters just effortlessly sharpen a similar knife from a blank; absolutely mind oogling.
Now that I think about it, "Sex, Drugs and Rock'n'Roll" pretty much sums it up. Except for the skateboards.
