So My Girlfriend's Becoming a Vegetarian...

remind her that as a vegetarian she is going to gain weight before she loses any (if that was her goal at all)

Not sure how that comes into play. Short term weight gain can be a possibility with any diet change if the caloric intake is drastically reduced throwing the body into protection mode. And becoming vegetarian does not necessarily mean one will have an increased or decreased calorie intake - or for that matter even lower/higher fat or protein intake.
 
who said anything about it being true?? the guy doesnt' want to be dragged into becoming a rabbit by his gf, so telling her something like "well you'll get fatter before you get thinner" might make her change her mind.

But why does he need to change her mind? She wants to be a vegetarian, he doesnt. Theres no written law stating that if your significant other is a veg you have to be as well. Let her cook herself some veggie meals and he can cook some meat for himself.

Any guy who can't cook his own meat is truly only half a man anyways.
