If you can work out a way that both of you can be satisfied with the food situation, and be respectful of each other, and it can work. If she is demanding that you not eat meat, just because it's the way she chooses to live, then you may be in for some real problems. Trying to force her to continue eating meat is as disrespectful as her trying to force you to be a vegetarian.
Maybe she'll be appeased if you make the commitment to only eating animals that don't eat meat - grass-fed cattle, for example.
