Tell me about cheese

The most sophisticated cheese I've ever had is Swiss cheese on my pastrami sandwiches. I'd like to venture into the world of gourmet cheeses, though. Unfortunately, I don't know anything besides the fact that the best cheeses tend to smell like old socks.

So, educate a poor American sap. What exactly is waiting for me in the mighty world of fermented milk?
 
Try everything, but in small amounts at first. You don't want to spend ten bucks on a big hunk of cheese if you don't know you'll like it. Check out the cheese article(s) at wikipedia: a lot of them try to describe the flavours and textures. Won't mean much at first, but once you've tried a few varieties, you'll have a better idea of what they're trying to describe, and the descriptions will mean more to you.

My personal fave is Cambozola, a combo of Camembert (soft and mild) and Gorgonzola (tangy blue.) Overall, it's fairly mild, but with tasty, semi-crunchy blue veins running through it.
 
I'd have to say that I'm not a big fan of anything similar to Bleu Cheese though i know many people like it so feel free to try it. I wouldn't suggest any of those cheeses that have meat in them. If you are looking for good cheese you don't wanna have any meat stuff in it. Just go out to a liquor store or whole food market and just grab a few different kinds to try yourself. Everyone enjoys different types of cheese so you can't really say a certain one is the best and you must have it. Just buy several different types and some bread to go with it and enjoy the wonders of cheese. Though my personal favorite is Gouda.... nice spicy white cheese. I also get bothered by mild white cheese with their lack of flavor and zing... still good but when goin' white i love it when its sharp.
