Saw this on a box of D'Addario ProSteels...it says "textured" which I suppose it's not the same as "coated" but I can't figure out what that means. What kind of strings are these? Any difference compared to "standard" (?) rounds?

Stainless steel rounds are more "textured" than nickel rounds in that their surface feel is a little more raw in comparison, even rough and grabby. At least that's the way I would interpret what's on the package.

Rougher texture, being described with market-speak as "Textured Rounds" to sound more pleasing. Gotta hand it to them, it's an inventive way to describe it. Not really a fan myself, though
By the diagram, it looks like it makes the bass cut through the mix on the bridge of the song.

That tapewounds are listed as darker than Chromes is saying something.
ProSteels are my go to. I will say they are more aggressive on your fingers than most. The sound with a pick is perfect for me.
To differentiate between rounds and textured rounds. It's marketing. They want the customer to know the steels are rougher. But they're not gonna call them rough and they're not gonna suggest they're rough by calling the nickels smooth.
When you're trying to sell something, it's prudent to speak positively about your product. The smooth strings are smooth. Smooth has a positive connotation. The rough strings are rough. Rough has a generally negative connotation. So they're textured instead. D'Addario is one of the biggest musical instrument accessory manufactures in the world. They seem to know what they're doing.

IIRC that was when they had their short-lived Flex Steels that they marketed as textured rounds.
I’m guessing that packaging (not the strings inside) was purchased back then when the Flex Steels were still around. I don’t recall D’A ever using that term for any other set of strings, but you’d need to ask them to confirm.
That's been my experience with this exact pack of strings, too. Once you wear them in, though, they lose a bit of that "stickiness" or "grab." Great strings all around, I have to say. I uses to be anti-SS, but this set has made me a fan.
In other words, they could rip your fingertips to shreds!
I began learning to play bass with strings like that when I was a kid. Luckily, my fingers moved too slowly at that point to be at much risk of drawing blood.
