Is it keg or bottle, if keg then what about pushing to a second keg through a 1 micron filter? That should pull the yeast out and allow you to control the carbonation directly, at the cost of lessening the effects of aging.

Bottled this one, but I am kegging my next batch, I promise. I might try another bottle tomorrow night that will have chilled for 3 days prior to opening. The FG is low enough that it shouldn't be that as an issue.
