The "What's for dinner tonight?" Thread

3 lbs boneless skinless chicken breasts
3 large tomatoes
1 red bell pepper
1 yellow bell pepper
2 green bell peppers
3 large Vidalia onions
2 lbs brown rice
olive oil
5 cups chicken broth
lots of curry powder
unbleached flour
salt
black pepper

Prepare brown rice according to bag directions substituting chicken broth for 5 cups of the liquid.
Heat 1 cup olive oil in skillet to 375.
Blend flour, 3 tbsp curry powder, 2 tsp salt and 1 tbsp black pepper.
Coat chicken in flour mixture. Cook on each side just long enough to brown.
Slice vegetables into strips.
Saute veggies in olive oil and curry powder.
Heat oven to 350.
Put rice and veggies in large covered roasting pan. Blend together.
Place chicken on top of rice.
Sprinkle black pepper and curry powder liberally over contents of pan. If you like salt, sprinkle some of that too. I don't.
Place cover on roaster.
Bake in oven for 45 minutes.
