Vegetables into Spaghetti

Not sure how long this has been going on but recently caught my attention and at first it sounded yummy especially when someone talked about doing it in replace of pasta with meat-sauce over it. Then I thought about it for a few more days and thinking, in the end you are just chopping up the vegetable in a different way, so why would that change how you cook?

Thoughts?

Texture matters when cooking. Pouring chicken tikka masala over some riced cauliflower gives a very similar experience to the traditional rice it's normally served with. Pouring it over huge chunks of a cauliflower head both change the way you eat the meal and the texture (and potentially even flavor) when eating them together.

It also can change the way you cook them if they're prepared differently.

When trying to substitute one food for a healthier alternative, it can also ease people into it by retaining a familiar shape, hence why veggie burgers are way more common than tossing a big hunk of tofu on a bun.
 
I have made zucchini lasagna. If you take the seeds out of a large zucchini and cut it long ways to make wide strips, you can use it in place of lasagna noodles. Make sure you cut the green skin/rind off the zucchini first. It's good.

We've been using spaghetti squash instead of normal pasta for years when we make spaghetti at home.
Delicious.
We have one of the spiralizers like in your second pic too. We use that for regular squash and zucchini.
