What makes you choose 4 or 8 ohm cabs?

I generally stick with 8 ohm because I'm not having to carry arenas with stage volume and I just don't need the boost 4 ohms gets. I do, however, use a 4 ohm cab with my SVT because that's what it needs. But why buy a 4 ohm cab for an amp you're going to run on 2 anyway?

This is why I have a pair of 8 ohm 112's. If I ampulling doubles on a day I don't have to load in a bigger cabinet for the brunch and I can take both for the slam fest night gig.

I'm an 8ohm guy myself. True, you don't get your amps full power with one cab, but a one cab gig to me is usually a quiter gig, so losing some amp power if fine. If I have something big and need lots of volume, I add the other 8 ohm cab and now I have full amp power into a 4 ohm load and a bunch of speaker to handle it. Simple.

I've got two four ohm cabs. I run two heads, as well. But either of my heads can go down to two ohms.
