I knew that NS Design recommends at least 1Mohm, but I guess I didn't realize it would make much difference the higher up it went. What is a remedy to get me up to that level of input?
Radial Bassbone OD, with the piezo switch on input A :)
That gives 10Mohm, which is a pretty good match.

In my home studio, I run that through a mixer to nearfield monitors, and it really does give me "my instrument, only louder."
Running my Stico through the same setup while my teacher test-played it, he had trouble being sure that he was hearing it through the monitors, so it's not just me talking myself into hearing what I want.

Surprising the DI that I use for years the MXR M80 is not listed as a choice. That is a fine choice and easy to get pretty cheap for the most part even brand new. My replacement, see the picture below for playing in church is the Mesa subway DI. So customizable to many tones but there is no growl or distortion associated with it you have to provide that separately if that's what you want.
In the picture there is an overdrive that I've since traded with a phase pedal and I like it a little better typically do not use it in the worship setting anyways. It's just there on the board with the Empress compressor, which also rocks!

I voted Mesa SW, but feel the Aguilar TH and SansAmp BDDI V2 would work well for this application. While the OP said it was not a necessity to have an XLR out, IME it is very valuable in applications like this.
