My understanding is that it gives additional fingerboard clearance to the E string.
You should be able to play harder (and achieve greater oscillations) without hitting the fingerboard.
I can see this being especially beneficial to heavy-handed German bow players that have a greater resting weight on the string.
I would imagine spiccato would be somewhat less 'clicky' as well. All depends on your technique, instrument, bow and action.
I had a bevel on my instrument when I first got it and when it was last resurfaced, I had my luthier get rid of the bevel.
With four major planings so far, it's time for a new fingerboard!
