Which Darkglass combo should I buy myself?

Been playing for 3 years now and want to move on from the Ampeg rb112 I bought when I started with something loud and versatile enough that I won’t need a new amp for the foreseeable future.

My instinct is to go with the DG112A as I prefer the simplicity and smaller size, but if I’m gonna spend 1k+ regardless it seems like having those extra bells and whistles for way less than their counterparts in pedal form (extra distortions, compressor, Octave, tuner) might actually equate to more bang for the buck as I could probably sell my JHS Double Barrel, OC-5, and Okko comp, for way more than the difference in price. Besides, if I order w/ a Sweetwater card it’s a difference of about $6/month over 36 months.

As to 1x12 vs 2x10, I play my short scale P bass way more than my Jazz bass (both sandbergs) and wonder which speaker config will complement the SS sound better?

if you're wanting to pay for 36 months, what're you aiming to improve with that upgrade? you already own a 1x12" combo with a DI out.
without the additional cab, the new expensive combo will be several decibels louder than the thing, you already have.

Even with the volume maxed on both amp and instrument the 100w Ampeg is barely loud enough. I don’t really need 500w at the moment but would rather get something to grow into rather than buy a 200w amp now and then make this purchase in a couple more years.

well, my point is that 'several decibels' is not that much. to get substantially more volume you need more both watts and speaker area.

I'd try 2x10 setups from Fender and Ampeg that your local dealer should have first, frankly.
if you'll like the sound, it's a pretty easy way to add a bit of volume and be able to get a second cab for being more loud.

the other way to go is a used head and some cabs. if it's local, you can demo it. for a small set-up, one 8-ohm 1x12, 1x15 or 2x10 would be a nice start. if you want to go loud and the weight doesn't bother you that much, you can get a great deal on some older 4x10.

Go for the 500w hands down. You will want it eventually. If you are bored of the 100 you’re good for the 500. Me personally, I like the sound of a bigger speaker so I’d pick the 1x12 over the 2x10. But that’s just me.
Depends on what you wanna do with it.
I’d watch a buncha YouTube comparisons of the 2 speaker styles and go from there.
With where you are, you’d prolly have to make a DRIVE to test before buying. I’d just order the dark glass. It’s good stuff, and in ‘style’ if you will so re-sale is there if you don’t like it.
The built in combo slider to combat the 7 bad systems right there on the amp is something you are gonna love. A 10 min video and you will learn how to use it.

Are you aware that the 210 is a “bigger” speaker than a 112?

7 bad systems? What might that mean?

yes the 2x10s have a better dynamic and range and sound but it seems like op wants to be “loud”. The 12 will move more air

The 7 bad systems refer to the 7 hz ranges that can interfere with mixing, 4 of them living in the range a bass mostly plays in. Darkglass gear often offers a mixer with dedicated functions to combat those specific ranges already dialed in on their products

At OP. The answer depends on how you plan on using the amp. Do you want or need the Darkglass sound? Personally I woudn't own anything by Korg, but that's because I've used their support, and it was beyond lacking.
