Which one would you choose, and why?

Everyone's tastes are different and only you can decide what is best for you but you know that mumbo jumbo by now I'm sure...

I would get the Cort. My first fiver was Cort and I still regret trading it to this day. Now, if I didn't already own a Fender style instrument, I would definitely go for the VM Jazz....then again...I really dig that Cort...and now i have gas pains.
 
Depends on what you want out of it. The one advantage to a Fender is that so many companies out there sell parts that fit that you can customize it pretty much any way you want it easily and relatively cheaply.

Don't like the neck? Allparts and Mighty Mite sell Fender Licensed ones in several varieties or you could have Warmoth make you one to your exact specs. You can always find tons of them for sale. Want to change out the pickguard? eBay has a bazillion of them for sale in all colors, shapes, and styles for Fenders. Pickups? Everyone makes Jazz pups that will fit a Fender. Even nuts from bone to brass are pre-cut, easy to find, and inexpensive for Fenders. Good luck finding nuts that fit a Cort perfectly without having to have one made.

The nice thing about Fenders is that even if the bass starts to look or feel "boring", for very little money, you can give it a complete facelift and feel like you have a new bass. Everyone sells parts for them. I'd pick a Fender over a smaller company like Cort in this case just for that reason.
 
Try the Squier deluxe jazz bass V active; I tried one a few weeks ago and the ebonol fretboard was very impressive.
Out of your options I would go for the MIM, purely personal choice. I've been happy with the MIMs I had and i can't bring myself to fault them. But I'm biassed.
As mentioned above, try them all, take as long as possible, and you'll know which one feels right.
