I always thought fudge was just compressed chocolate cake - kind of like sedimentary rocks getting mushed - so the first mild compression, you get brownies, but keep the pressure on long enough, you get fudge! hehe

I know this isn't scientifically correct, but I don't care...this is one of the best theories I have ever read!

I discovered Kilwin's fudge when I spent a week on Mackinac Island in Michigan. Wonderful vacation spot, and island out in the great lakes.

Fudge is wonderful stuff!!
