If I had to pick just one it would have to be Billie Holliday. Extraordinary ability to sing around the beat. Check out Papa Ain't Got Rhythm
 
I'm not so much into the music but I think K.D. Lang is a fantastic singer. I also love Bjork for her originality and the way in which her personality so much comes through in her singing. Shara Nelson and Caron Wheeler are another two that I like a lot.
 
I really liked Joan Osborne's early stuff - before they tried to make her a pop star. Her live cover of "Son of a Preacher Man" is about as soulful as you can get.

I'm with you...check out her version of "Smiling Faces Sometimes".
Similar thing for Joss Stone, too...her debut recording was happenin'...then the Popstar thing began.
 
A tie between Eva Cassidy and Nashville's own Jonell Mosser. She's absolutely wonderful and a total sweetheart besides. I had the honor of playing on her tribute to Townes Van Zandt Around Townes (Winter Harvest 1996).
