Will this work? Re-finishing a jazz

I have a black MIM 2008 Fender Deluxe Active Jazz that I'd like to sand down and re-finish to make natural and maybe do some mods.

My question is, would this work or would should I expect to find unpleasant wood (knots, multiple pieces glued together, wood filler, etc) and if anyone's done this, how did it work out?

Basically I want to make my black jazz look like this

If the wood is nicely matched and there aren't any blemishes, then it would be do-able. I personally wouldn't want a natural bass that wasn't a one piece body (which this is unlikely to be) but each to their own :)
