Taking a strat body, loading it with a bass humbucker, slapping a bass neck on it, and replacing the bridge with a jazz bass bridge?

As long as the scale is right. 34" from bridge to nut.
You won't be "Slapping" anything on.. The neck pocket will have to be routed out to accept the bigger/wider bass neck - same with the bridge if it's set-in. If it's a surface mount, then ya. The Pup cavities are probably too small for the bass pups, again routing will be required.
Use painters tape on the body BEFORE you do any routing to keep it from getting scratched up.
Measure twice cut once.
