Will both basses still come out of each XLR output?
Could I also use one of the 1/4" outputs to run into the amp if I'm set in mono?
Would that be better than using the headphone out?

Confirmed for sure:
On mono, all 5 outputs contain both signals.
On stereo:-the left xlr, left 1/4" and headphone jack only contain channel 1.
-the right xlr and right 1/4" only contain channel 2.

If I was you I'd get an A/B box and use the DI out of the combo.

Actually, I'd leave the 4 string in the car.

As an update: I found an adapter that converts TRS to TS and was able to accomplish what I was trying to do:

I could pan each bass to one side with each one having its own 1/4" and XLR output.

The adapter was plugged into the headphone output which contained both signals and sent the mixed signals to the amp.

In the end though, I decided to keep it simple and followed the suggestion to just get an A/B box.
