linear or audio taper has nothing to do with it being able to be turned all the way off, (it just changes the taper) so something's amiss with your wiring.

Now the volume has very little dynamic range and can't be turned off completely. Is it because of the different taper or did we screw up something else?

As said, the taper has got nothing to do with that.

You just probably forgot to ground one end of the volume potentiometers track.
Everyone does that mistake sometimes.
