8x10 will be easier to transport imo as long as no stairs are involved , but for smaller gigs 8x10 will be too much so in that case having two 4x10 is better option
I know I'm risking ridicule but I use two old Trace Elliot 1x15's, keep one at rehearsal space and one with me in the car for gigs and jams. If its a really big gig I ask them to throw the practice box in with their gear so I can stack. I find them easier to handle than my 4x10 cab.
Moving the 8x10 is way easier for me. But now I also carry a dolly with me when I have the separate cabs (4x10 and/or 1x15). I dead lift as infrequent as possible cause I do it all day long at work.
I use what I have handy.
Actually, now that I look around I realize I also have a bunch of 14/4 on hand, and it might be easier to cobble together a series harness with that.
Tonally they're not in the same league. Most 8x10s follow Ampegs example of 4 2x10 sealed chambers. Most 4x10s tend to be ported.
I have the reverse. My 4x10 is sealed. My 8x10 has 4 ports. Each set of 10s share a port. Damn thing is heavier than an Ampeg Fridge but has a second set of handles so there is no issue with someone helping me lift it.

I had an Ampeg 810E wayyy back in the day, but I have been using two Ampeg 4x10 cabs since 2000. I like two 4x10s over one 8x10, mainly because the overall height (especially with casters) is great for hearing oneself at remarkably low volume, in contrast to the monster standing in the backline. I do appreciate the ability to break it down to one cab, but this is useless for stage monitoring, because one cabinet is only tall enough to hit your legs, not ears.
Will be powered by a Mesa Strategy 8:88 or VBA 400 (at least until it sells), so I could go two 4 or 8 ohm cabinets or one 4 ohm 8x10.

I would go with the 2 cabs myself. I gigged a Peavey TKO 115, single 15" BW and a particle board cabinet. Thing weighed more than a pound per watt, and I put casters and recessed speaker handles on the sides. Made moving it a lot easier, but for this certain club where the band played on the second floor, up a steep narrow flight of stair I found the best way was to reach down and bear hug it, have the amp just above my center of gravity and walk up the steps.
The other option was to have 2 guys on each side. Stairway was so narrow one was ahead of the other, and it was more awkward and dangerous than the way I did it myself.
Of course, I was in my early 20's, and my back wasn't this bad (wonder why now).
