2 guitarists plus a Keyboardist?

From all the complaining I see around here, having a keyboardist in a band with a single bassist is more of a problem than keyboards and two guitarists ...

Why not? As long as the musicians actually know how to arrange for that line up, and play tastefully.
Listen to Tom Petty and The Heartbreakers for good examples of how less is more.
