I gigged a single Eden 210 xlt for a few months and it was plenty. Those suckers cut and are loud af.

2x10 or not 2x10 (4x10), that is the question

I generally agree with this statement. However that is based on my experience with 210's and 410's. If you are comparing 2x 210's that can take combined more power than the 410 you compare them against that changes the conversation.
Personally I think if you are going to buy a 210 and consider a second cab, then get a 4 ohm 210 and a 4 ohm 410.
I'm a 410 guy. I have a GK410 NEO that's a breeze to schlep. I'm pushing 60 and don't have a problem with it. I haven't heard the newer higher power 210s though, but I can't believe 2 210s are less of a hassle than one NEO 410.
Up to a month ago I would have suggested two 210s. Having recently acquired a Barefaced Four 10 has turned my speaker world on its head. Small enough and light enough to be an easy schlep, loud enough and tuneful enough to cater for just about any indoor gig.
If the reviews are even half true a single twelve Barefaced Big Baby 2 will perform comparably to a 410. Seems hard to believe, but haven't tried one myself.

As you might now, I have both the Four10 and the Big Baby 2. The BB2 is pretty amazing (both are, of course). I played an outdoor event a week ago with a single BB2 without PA support using, part of the time, a 5-string bass. The sax player said she walked around and the bass sounded great everywhere. Which is exactly what I love about the BB2-- very full, deep sound that keeps it solid deep tone even at considerable distances from the cab. I love my Four10 and it is my #1 for indoor gigs-- it's just the perfect tone palate for me. Haven't really tried to push it in environments like I did with the BB2 (outdoors/no PA) and I bet it would probably do well, but the way the BB2 sounds so full and rich, it seems perfect for outdoor stuff where you want to have great thick sound. And the fact that just one was sufficient, and it weighs 29 pounds, is awesome. The surface area of cones on a Four10 is nearly triple that of a BB2 so I am sure that the Four10 will do great too outdoors, but the BB2 is sweet liquid PA bass. Some Day I will have a 2nd BB2 or a SM to add to it, at which time I will officially be "anywhere, any time, any size" with my BF riggage. I have not yet been in a situation where the single BB2 (or Four10) has not been enough, but just in case
2 210's is a nice little setup. 2 410's is great if you really need that much output. I've run a vertical 210 for some time now and have been very pleased with the results.
I'm a Barefaced user (2 Super Compacts) but I'm assuming they are beyond the budget, so I'd suggest 2 Bergantino CN112's to go with your TH500.
These are fantastic cabs with a great tone that will fill any room without overpowering the other musicians, will have enough volume for any band and are light and modular. I used 2 112's and a 112 and 210 together. These cabs are magical.
Barefaced 410 low passes half the drivers down one side to be free of the beaming of the mids you get from the side by side arrangement.
